Broccoli, Chilli and Garlic Tagliatelli - Serves 4
Ingredients
14oz / 397g dried tagliatelli
11oz / 312g broccoli
2 garlic cloves
1 red chilli
Fry Light
salt and pepper
4 level tbsp grated Parmesan cheese
Method
1. Cook the tagliatelli according to instructions. Drain and keep warm. Meanwhile cut the broccoli into small florets, peel and finely chop the garlic. Deseed and finely chop the chilli.
2. Steam or boil broccoli for 5-6 minutes, drain and keep warm.
3. Spray a large non-stick frying pan with Fry Light, place over a medium heat and when hot, add the broccoli, garlic and chilli. Stir fry for 3-4 minutes and then add the drained pasta. Toss to mix well and stir through. Cook for 1-2 minutes.
4. Season well and serve immediately sprinkled with parmesan cheese
