Mixed Pepper and Chicken Bake - Serves 4
Ingredients
4 garlic cloves
2 medium onions
1 red pepper
2 yellow peppers
1 orange pepper
1 lemon
salt and pepper
4 skinless chicken breast
2 tbsp black poppy seeds
1/4pt / 142ml stock made with Chicken Bovril
Basil leaves to garnish
Method
1. Preheat the oven to 180. Prepare the ingredients and peel and finely chop the garlic. Peel and slice the onions; deseed and thinly slice the peppers, zest and juice the lemon.
2. Season the chicken and sprinkle with poppy seeds, set aside.
3. Mix together the garlic, onions and peppers and place in a shallow oven proof dish. Place the chicken fillets on top of the vegetables in a single layer. Drizzle over the lemon juice and scatter the zest. Pour over the stock and place in the oven for 20-25 minutes until the chicken is cooked through and the peppers are tender.
4. Remove from the oven, season well and garnish with Basil before serving
