Pork and Herb Loaf

Makes a great starter, thinly sliced with some salad, or a nice heartwarming dinner with mash and fresh spinach.


Pork and Herb Loaf

Ingredients
1 onion peeled and finely chopped
2 garlic cloves peeled and crushed
4 tablespoons of flat leaf parsley
2 tablespoons of fresh oregano
2 teaspoons dried oregano
500g of extra lean mince pork
8 rashers of lean bacon
1 egg

Method
1. Put the onion, garlic and herbs into a food processor and blend until finely chopped.  Add the herbs to the minced pork and add the egg.
2. Finely chop 2 rashers of bacon and add to the mince pork and season well.  Mix together.  Use the leftover bacon to line a 2.5" loaf tin allowing the bacon to overhang.  Put the meat into the tin and press down and put the over hanging bacon over the top.
3. Put boiling water into a roasting tin and fill halfway.  Place the meatloaf tin intot the roasting tin and bake for 1 hour and wait until the loaf shrinks from the side of the tin.  Cool the meat loaf for about 10 minutes and pour away the excess liquid and serve either hot or cold.
