Potato Leek & Feta Burgers – Serves 2
Ingredients
170g (6oz) sweet potato, peeled and chopped
170g (6oz) potato, peeled and chopped
170g (6oz) leeks, trimmed and chopped
170g carrots, peeled and chopped
3 garlic cloves, peeled and chopped
85g (3oz) feta cheese
1-2 dashes Tabasco sauce
1tbsp freshly chopped coriander
Black pepper
Method
1. Preheat the oven to 190C / Gas Mark 5.
2. Boil the potatoes and carrots for 15-20 minutes until tender, then drain and mash.
3. Add the leeks, garlic, feta, Tabasco, coriander and pepper and mix well.
4. Shape into four burgers. Bake in the oven for 15-20 minutes.
Add 5½ Syns per serving if not using the feta cheese as a Healthy Extra Option
