Vegetable Stroganoff

Vegetable Stroganoff  - Serves 4

Ingredients
Fry Light
1 onion, chopped
1 clove garlic, crushed
1tbsp paprika
1tbsp tomato puree (½ Syn)
100g (3½oz) sliced mushrooms
 ½ green pepper, deseeded and chopped
113g (4oz) Morrisons vegetable & pasta mix
400g tin chopped tomatoes
 Salt and freshly ground black pepper
1ltr (1¾pt) stock, made with Vecon or chicken Bovril 

Method
1. Heat a large saucepan sprayed with Fry Light and gently fry the onion and garlic gently for a couple of minutes. Add paprika and tomato puree and continue frying over a low heat for 2 minutes.
2. Add mushrooms and pepper and stir well until coated. Stir in tomatoes and simmer for 2-3 minutes. Add vegetable & pasta mix and stock and bring to the boil. Reduce heat and simmer for 40 minutes. Season to taste.
