Rice Pudding

Rice Pudding (the Slimming World way) - Serves 2

Ingredients
50g Pudding Rice
2tbsp sweetener
1 pint skimmed milk
1tsp vanilla essence

Method
1. Rinse rice in cold water and place with sweetener and milk in a pan and bring to the boil.
2.  Cook for about 20 minutes or until rice is soft, add more sweetener (if required), and vanilla and simmer for about 15 minutes until thick and creamy.

Optional: try adding some nutmeg, or grated orange zest for extra flavour
