Yorkshire Cheese Tart - Makes 12 cakes
Ingredients
227g / 8oz low fat natural cottage cheese
5 level tbsp sweetener
28g / 1oz sponge cake crumbs
57g / 2oz sultanas
grated rind of 1/2 lemon
2 egg yolks
1 egg
Method
Preheat the oven to 180c, sieve the cottage cheese into a bowl and add the sweetener, cake crumbs, sultanas and lemon rind. Mix well, and then beat in the egg yolks and egg.
Spoon into an 18cm/7" non-stick sandwich tin and bake for 15/20 minutes, until brown.
