Leek & Potato Soup
Ingredients
1 large onion, chopped
11346ml / 2pints vegetable stock
3 leeks, finely chopped
170g / 6oz potatoes, peeled and diced
Salt and pepper to taste.
Method
1. Put the onion, leeks and ½ pint of stock in a large pan. Cover and bring to the boil.
2. Continue boiling for 5-10 minutes and then cover and reduce the heat, simmering for about 20-30 minutes until the onion is tender, golden and syrupy.
3. Add the potatoes to the cooked onion and leeks in the pan together with the remaining 1.5 pts of stock. Season to taste and simmer for 20 minutes.
4. Puree the soup and serve.
