Bangers & Mash

One of my favourite things in the whole wide world is sausages.  If you go to the market and look around you can find some really tasty sausages and low in fat too.  Particularly the game type sausages which have a really strong flavour.  If you're not a fan though try just normal low fat sausages and stick them in this dish (if you're a veggie, use Quorn sausages):

Bonfire Night Cheese Topped Bangers & Mash Pie - Serves 4
Ingredients
Cooking Spray
1 onion finely chopped
2 garlic cloves, crushed
8 sausages, roughly chopped
400g can chopped tomatoes
3tbsp soy sauce
400g can mixed beans, drained and rinsed
198g / 7oz mixed vegetables
salt and pepper
freshly chopped herbs to garnish
for the topping:
908g / 2lb potatoes, peeled and roughly diced
salt and pepper
2tbsp fat free fromage frais
1 egg, beaten
113g / 4oz cheddar cheese grated
pinch of grated nutmeg
4tbsp dried parsley

Method:
1. Preheat the oven to 180c / Gas 4 and prepare the topping.  Boil the potatoes in lightly salted water for 15-20 minutes until soft.  Drain and mash with fromage frais, beaten egg, cheese, nutmeg and dried parsley.  Season well and set aside.
2. Spray a pan with cooking spray and cook the onion, garlic, sausages and tomatoes.  Stir and cook for 20 minutes.  Add ht mixed beans, mixed veg and the soy sauce, season and pour into an ovenproof dish.  Carefully spread the potato mixture over the top.
3. Cook in the oven for 25-30 minutes until the topping is lightly browned. Serve garnished with the fresh herbs.
