Hearty Corn Chowder - Serves 4
Ingredients
Fry Light
8 spring onions, finely sliced
1 garlic clove, crushed
1 1/2 pt / 825ml vegetable stock
400g can sweetcorn niblets, drained
418g can Creamed-style sweetcorn
1 red pepper, de-seeded and finely diced
A small handful of fresh coriander, chopped
1 tbsp soy sauce
Salt and Pepper
Method
1. Spray a pan with Fry Light, add the spring onions, garlic and stock and bring to the boil.
2. Add both varieties of corn, the red pepper, coriander and soy sauce, bring to the boil again. Reduce the heat, cover and cook for 4-5 minutes
3. Remove from the heat, season serve.

If you like a bit of a kick in your food increase the garlic and add chilli to taste.
